Artist of the Week: Cloe Wilder

Indie-pop singer-songwriter Cloe Wilder is KX FM’s Artist of the Week!

We asked the Florida-based musician to share a recipe that she loves to make and she sent us instructions on how to bake delicious lemon bars.

Ingredients:

All Purpose Flour

Powdered Sugar

Salt

Vanilla

Unsalted Butter

Granulated Sugar

Large Eggs

Fresh Lemon Juice

 

  1. Preheat your oven to 350 degrees. Line the bottom and sides of your baking pan with parchment paper sticking above the sides of the pan.

  2. To create your crust, combine 2 cups + 2 tbsp of flour, 1 cup of powdered sugar, and 1/2 tsp of salt in a medium bowl. Add and stir in 1 cup of melted butter and 1 tsp of vanilla.

  3. Crumble and add the crust to the pan and press it evenly to the bottom.

  4. Bake the crust for 15-20 minutes until the edges are slightly brown.

  5. To make the filling, combine 2 1/2 cups of granulated sugar and 1/2 cup of flour in a bowl. Add and whisk 7 large eggs, 1 cup of lemon juice, and  a pinch of salt. Make sure not to over mix.

  6. Pour the filling onto the crust and bake for 18-22 minutes. Let cool for 15-20 minutes and then refrigerate.

  7. Cut into squares and serve topped with powdered sugar.
